Dr. Gil Carvalho says the widespread social-media claim that vegetable and seed oils are harmful is not backed by evidence — research consistently shows better health outcomes associated with vegetable-sourced oils. The real concern with cooking oils is industrial deep frying, where oil is reused repeatedly over days, causing significant deterioration; home cooking methods such as stir-frying and boiling are not a meaningful concern. For olive oil specifically, extra virgin varieties (unrefined, cold-pressed) show some additional benefits over refined versions, likely because refining removes beneficial compounds called polyphenols, but other common oils such as canola still show overall health benefits in research.
